  • Kent: 0.25 oz boil over (75m)
  • Kent: 0.75 oz (60m)
  • Kent: 0.5 oz (45m)
  • Cascade: 0.25 oz (5m)
  • Cascade: 1.75 oz (knock-out)
  • Hallertau: 1.0 oz (whole, dry hop in secondary)

Mash: HochKurz Double Decoction Mash

  • Burtonized Water – 1.5 tsp gypsum, 0.5 tsp Epsom salts, 0.o625 oz salt
  • Mash-in @ 131 deg. for 20m
  • Step to 145 deg. for 15m
  • Pull 14% decoction; slow rise to 152 deg.; then 10m boil
  • Remix to saccrification rest @ 152 for 45m
  • Pull 35% decoction to boil
  • Mash out at 168 deg.
